Roasted Red Pepper + Fennel Orzo Salad

Ingredients:

- 1 package of Orzo

- Roasted Red Pepper (store bought and jarred is fine)

- 1 red onion

- 1/2 Fennel Bulb, Cut up

- Grape or Cherry tomatoes

- Fresh Basil



Dressing:

- 1 tbsp balsamic vinegar

- 1 tbsp olive oil

- Salt and pepper to taste


Steps:

  1. Cook Orzo according to recipe on package

  2. Cut up Red onion, Tomatoes, Fennel Root, and Basil

  3. Rinse Orzo in cold water and cool in fridge for 30 minutes

  4. Add veggies to the Orzo and mix

  5. Mix up the dressing in a separate bowl and pour over salad

  6. Toss and enjoy!


*Can stay in the fridge for a few days*
